Hey All,
So this week has been fraught with stress. Plumbing, work....you name it, its been stressing me out. I'm still considering therapy for that stuff, but that's likely to find itself in a diary somewhere.
So let's talk about my leftover turkey delight that turned out like a dream, although my dream was of a slightly different intent.....
Now that all is well, my joy of cooking is back! Last night I decided it might be a good idea to strip what I could off the turkey carcass and turn it into a shepard's pie in the crock pot.
I put a healthy layer of turkey in the bottom, diced up some celery and thrw that one, sliced an onion in quarters, sliced the mushroom stems leftover from the filled mushroom caps, and threw som baby carrots on top. I tossed it all with about 1/4 cup of flour for thickening. Then 2 cups of broth over the top. Next I patted what was left of the mashed potatoes on top and sprinkeled "sum sort of italian" over the top.
I turned it on low this morning and came home to stew? WTF? This was supposed to be a pie type affiar....maybe too much liquid. I served it over the dried out focaccia and it was great!
So next I'm going to make some mozarella. Its not the easiest thing to get the hang of, but Ricki and her crew and Frank Hauser have invaluable advice. The trick I learned is actually to keep the milk gently moving while heating to the final temp. The curd is a bit finer, but you get a consistent product.
So the weekend is here...and its time for me to create. I'm sure there is more to come for great food ideas :)
